Anyone know what the sensor shown in the attached picture is?

It's not covered in my workshop manual, and all the pictures of the crank covers just show it being a blanking plug.

The wiring loom to it seems to be original - I need to replace the sensor because the spade connector has snapped off.

Someone drilled and tapped the plug for an oil pressure gauge sensor. I assume someone has removed the gauge from the bike. No idea how that particular sensor is calibrated, so it might be hard to get a proper gauge for it with any sort of calibrated markings. You might just want to replace the sensor and plug with a good stock plug. They should be still available from Kawasaki.
